You Will Need...
- 5 Cups Butternut Squash & 1 Cup Russet Potatoes
(chopped & Peeled)
- 5 Cups Chicken Broth
- 2 TSP Butter
- 1 Medium Sweet Onion
- 1 TSP Salt
- 1/2 Cup Heavy Cream
- 1 1/2 Cup Diced Cooked Ham
- Pepper to taste
Saute sweet onion in for a few minutes! Then add Squash, Potatoes, Chicken Broth, & Salt
Cover & Boil for 20 minutes on med/high heat.
Place cooked Squash in blender or food processor and blend until pureed. Then place back into pot and add Heavy Cream, Diced Cooked Ham, & Pepper
Warm Through & Serve with Toasted Bread w/ Pesto & Feta Cheese!
