Easy Peach Cobbler

I LOVE this recipe. My mom has used it for as long as I can remember. But as you read you will see even though I have made this more times that I can count, every now and then we FAIL!!!!

You Will Need...
  • 1 BIG can peaches

  • 1 cup white sugar

  • 1/2 stick of butter

  • 1 cup self-rising flour

  • 1 cup milk

  • PreHeat Your Oven to 400 Degrees - Place Butter into your casserole dish and place in the oven. Then take your Flour, Sugar, and Water and mix together..

Pull the casserole dish out of the oven (Butter should be melted and hot).. Pour in your canned peaches (syrup and all).. Take your flour/milk/suar mixeru and pour into peaches, I kinda doll-up spot to spot around the pan. DO NOT STIR/MIX..

Place in the oven and bake 30 to 40 Minutes!!

DO NOT start watching harry potter with your 9 year old son and forget to check the oven an hour and half later... FAIL

    Guess What We Got....

Back in March we embarked on a "Chicken Adventure" and added 8 girls to our home! Over the past 17 weeks we have had a blast watching them grow! I never knew having "fresh eggs" would be this much fun! Now we have 2 active girls laying an egg a day and 6 more ready to start laying at anytime. I LOVE the taste of fresh eggs in our foods. Plus the girls are fed a non-medicated diet and free range during the day.. So I know these eggs couldn't get any better!!!

    And Today's Eggs...

Our garden is also doing GREAT this year. I snapped some pictures this morning....

HomeMade Baby Food - Sweet Potato

    Sweet Potatoes

*NOTE* White or Light colored Sweet Potatoes are more dry and not as tasty as the deeper orange colored sweet potatoes.

Wash and poke holes in sweet potato with fork then wrap sweet potatoes in tin foil - do not peel for baking/microwaving.

Place in a 400 degree oven and bake for 30-60 minutes or until soft

Remove skins by slitting the sweet potato lengthwise when cooled then scoop out the "meat".

Puree with liquid of your choice (water, breastmilk, etc.) until desired consistancy!

Place in ice-cube treys and freeze. Take frozen cubes and place in ziploc freezer bags. I store mine no longer than 2-3 months!
