Easy 3 Ingredient Baked BBQ Pork Chops

You will need...
 - 1/2 Jar of you favorite BBQ Sauce
 - 1 Onion
 - Meat of choice (Chicken or Pork)

Set oven to 450... Take thin pork chops and add to baking dish, then add onion and BBQ sauce. Mix together evenly (Yes I use my hands)..



Cover with foil and bake for 30 minutes (alittle longer if thick chicken).. Plate and enjoy. The remaining pan juices is an amazing gravy for potatoes...




Also try this recipe with Chicken and add sliced pineapple on top!!

Chicken Cordon Bleu

This is my husbands favorite chicken dish. I have never made it from scratch (just bought the ones made at the store), so this was an adventure. Well it turned out great and now is one of our favorites! My boys were licking the sauce pan..HAHA

You Will Need...
 - 3to4 Boneless, Skinless Chicken Breast
 - Flour
 - 1 TSP Paprika
 - 6 TSP Butter
 - Ham
 - Swiss Cheese Slices
 - 1/2 Water
 - 1 Chicken Bullion Cube
 - 1 Small Carton of Whipping Cream
 - Tooth Picks

Take your Chicken Breast and place in wax paper, smack it until its flat! HA I used the side of a small hammer! My kids got a kick out of it!



Place a couple thin sliced ham and Swiss in the middle of the Chicken. Roll up and secure with about 3 toothpicks! Combine about 1/2 cup flour and Paprika on a plate and lightly dredge your Chicken coating all sides! I held my chicken and rubbed the flour mixture over it with my hands!




Place 4 TBSP of Butter in skillet and warm over medium high heat. Place Chicken in the skillet and brown on all sides!


Remove and place on a plate. I washed my skillet here b/c I don't like the "burnt" taste of the butter, this is an optional step! Place skillet back over heat and add your remaining 2 TBS of Butter. Place Chicken and water/Bullion mixture in pot. Bring to a good simmer and cover for 20 to 30 minutes!



Now take about a TBS of "softened" butter and 1 TBS of flour and mix well. Remove Chicken and add butter mixture to skillet. Pour in cream and stir until thick! Place Chicken on your plate and pour Cream Sauce over it!!! ENJOY

Baked Pineapple Chicken

Baked Pineapple Chicken - So Yummy!

You Will Need...
 - Boneless Skinless Chicken Breast
 - Large Can of Pineapple Chunks
 - Dried Rosemary
 - 1 TBS Soy Sauce
 - 1 TBS Yellow Mustard
 - 1 Small Onion (diced)

Preheat Oven to 400 Degrees

Take your Chicken and coat both sides generously with rosemary. Also season with salt & pepper to taste! Add in your onion!




In another bowl drain pineapple juice and add soy sauce & mustard. Mix and pour over your chicken & onion.



Place uncovered in oven for 15 minutes! Then pour your pineapple chunks over the Chicken and return it to the oven to cook another 10-15 until minutes or until chicken is done! Plate and serve!!!

Orange Chicken - Slow Cooker Style

We LOVE orange chicken around here and so this dish was a huge hit!! The biggest surprise is that my 22 month old daughter had two servings..lol Guess she liked it ;)

You Will Need...
 - 4 Boneless Skinless Chicken Breast (Cut Into Bites Size Pieces)
 - 1/4 Cup Flour
 - 2 TBS Vegetable Oil
 - 1 Cup Orange Marmalade
 - 1/2 Cup Yellow Mustard
 - 1/2 Cup Ketchup
 - 1/4 Cup Water
 - 3 TBS Brown Sugar
 - 3 TBS Rice Wine Vinegar
 - 3 TBS Soy Sauce
 - 1 TBS Powder Ginger
 - 1 Small Sweet Onion
 - 1 TSP Red Pepper Powder (optional)

Take your Chicken and Flour and place in a bowl and mix together. Place oil in skillet on medium high. Shake off extra flour and add chicken to skillet. Cook until golden brown on each side!




Add Marmalade, Mustard, Ketchup, Water, Vinegar, Brown Sugar, Soy Sauce, Ginger, Onion, and Red Pepper to crock pot and stir! Place Chicken into mixture and stir. Cook on low for 6 hours!



Place over a bed of white rice and/or side of noodles and ENJOY!!!

Slow Cooker Cream Cheese Chicken

Slow Cooker Cream Cheese Chicken & Noodles

You Will Need...
 - 3 Boneless Skinless Chicken Breast
 - Italian Seasoning
 - 2 Cup Chicken Broth
 - 1 TBS Butter
 - 1 Medium Onion
 - 1 Package Cream Cheese
 - 2 Cloves of Garlic
 - 1 Can Cream of Chicken Soup

Place Chicken in Slow Cooker. Sprinkle both sides generously with Italian Seasoning & add 1/2 cup Chicken Broth. Place lid on and cook on low for 6-7 Hours..




About 30 Minutes before your ready to eat, in a pot add Butter & Onion and cook until they start to caramelize. Add in garlic and cook for additional minute. Add in rest of Broth, Cream of Chicken Soup, Cream Cheese and stir. Once everything is melted together pour over Chicken Breast and mix together. Chicken will be so tender as you stir it will break it up! Cook on High for 30 minutes.






Pour over Egg Noodles or Rice and enjoy. I saved my leftovers and ate them on day 2 and they were even better than the night before!! **This dish would be great for taking to a sick friend or new parent - Its a great comfort food and keeps great*

Yummy Tummy Chicken Salad

I should have called this everything in the kitchen Chicken Salad..lol

You Will Need...
 - 2 to 3 Chicken Breast
 - 1.5 Cup Mayo
 - 4 TBSP Ranch Dressing
 - Small Sweet Onion (Chopped)
 - 1 Cup Sweet Red/Purple Grapes (Sliced)
 - 3 Dill Pickles (Chopped)
 - 1/4 Cup Walnuts
 - 1 TSP Italian Seasoning
 - Salt & Pepper to Taste

Take a pot of boiling water & add your Chicken & Italian Seasoning.. Boil until Chicken is cooked through


Take your chicken and shred using a fork!


Add in you Mayo, Ranch Dressing, Onion, Grapes, Salt & Pepper, and stir together!


Optional you can add the Pickles and Walnuts!


Put on some bread and ENJOY!!!

Italian Baked Chicken & Pastina

I saw this recipe on the Food Network channel. Chef Giada De Laurentiis was the one who prepared it (LOVE HER)!!!! It looked so yummy and I had all the ingredients on hand so I decided to cook it for dinner.. OMGosh it was so good, and a huge hit with my kiddos. I think my youngest son had 3 helpings of it.lol So defiantly add this one to your recipe box!!!

You Will Need...
 - 1.5 cup pastina pasta (or any small pasta)
 - 2 tablespoons Vegetable Oil
 - 2 Chicken Breast (Cubed)
 - 1 Small Onion (Chopped)
 - 2 Garlic Cloves (Minced)
 - 1 Can Diced Tomatoes (With Juice)
 - 2 Cup Shredded Mozzarella 
 - Salt & Pepper to Taste 
 - 1/4 Cup Bread Crumbs
 - 1/4 Cup Grated Parmesan
 - Real Butter

Boil your water for the pasta. Add it along with salt for flavoring and cook till its still got a good "bite" to it.. About 5-8 minutes!!!

Meanwhile Add your Chicken and Oil to the skillet and begin to brown on Medium High Heat.. After about 5 minutes add in your onion & garlic and continue to cook until onions start to caramelize!



 Drain Pasta and add it to a large mixing bowl. Add in Your Chicken, Onion, Garlic, Mozzarella Cheese, Tomatoes and mix well!!!





Now in a small bowl mix your Bread Crumbs & Parmesan Cheese. Take mixture and spread over Dish! Top with small pieces of Butter...



Place in 400 Degree oven and cook for about 30 minutes! Do not over cook!!!!!




**THIS DISH FED MY PARTY OF 5 AND WE COULD HAVE HAD LEFTOVERS, BUT IT WAS SO GOOD WE ATE THEM THAT NIGHT**
